Description
Make a rich, restaurant-quality creamy chicken pasta at home quickly using a simple one-pot method. This dish features tender chicken, sun-dried tomatoes, and Parmesan cheese.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small yellow onion, chopped
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups chicken broth
- 8 ounces dry penne or rotini pasta
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped (for garnish)
Instructions
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken and set it aside.
- Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and chopped sun-dried tomatoes and cook for 1 minute until fragrant.
- Stir in the Italian seasoning, salt, and pepper.
- Pour in the chicken broth and bring the mixture to a simmer. Add the dry pasta to the skillet.
- Cover the skillet and cook for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is nearly tender and most of the liquid is absorbed.
- Return the cooked chicken to the skillet. Reduce the heat to low.
- Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy. Cook for 2 more minutes until heated through. Do not boil after adding the cream.
- Remove from heat. Garnish with fresh basil before serving.
Notes
- You can substitute rotisserie chicken for fresh chicken to save cooking time. Add the cooked chicken during step 6.
- For a richer flavor, use the oil from the sun-dried tomato jar instead of olive oil for sautéing.
- If the sauce seems too thick, add a splash of milk or extra broth until you reach your desired consistency.
