Instructions

  1. In a large bowl, combine the cold leftover mashed potatoes, beaten egg, 1/2 cup flour, cheddar cheese, chives, garlic powder, salt, and pepper. Mix gently until just combined. Do not overmix.
  2. Place the remaining 1/4 cup of flour on a shallow plate for dredging.
  3. Scoop about 1/3 cup of the potato mixture and form it into a thick patty, about 1 inch thick and 3 inches wide.
  4. Lightly dredge each potato cake in the flour, shaking off any excess.
  5. Heat the vegetable oil or butter in a large skillet over medium heat. You need enough oil to coat the bottom of the pan well.
