Description

Make this simple, creamy vegan matcha chia pudding for a healthy, make-ahead breakfast or snack.


Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or other milk)
  • 1 tablespoon maple syrup (adjust to taste)
  • 1 teaspoon high-quality matcha powder
  • 1/2 teaspoon vanilla extract


Instructions

  1. In a jar or bowl, combine the almond milk, maple syrup, matcha powder, and vanilla extract. Whisk well until the matcha is fully dissolved and no clumps remain.
  2. Add the chia seeds to the liquid mixture. Stir thoroughly for about one minute to prevent the seeds from clumping at the bottom.
  3. Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the mixture thickens to a pudding consistency.
  4. Stir the pudding again before serving. If it is too thick, add a splash more milk until you reach your desired creaminess.
  5. Serve cold with your favorite toppings.

Notes

  • For extra protein, stir in 1 scoop of vanilla or unflavored protein powder with the wet ingredients before adding the chia seeds.
  • To make this a parfait, layer the matcha pudding with Greek yogurt (if not vegan) or coconut cream and fresh berries.
  • If you prefer a sweeter pudding, increase the maple syrup to 1.5 tablespoons.
