- 1/4 cup chia seeds
- 1 cup unsweetened almond milk (or other milk)
- 1 tablespoon maple syrup (adjust to taste)
- 1 teaspoon high-quality matcha powder
- 1/2 teaspoon vanilla extract
Instructions
- In a jar or bowl, combine the almond milk, maple syrup, matcha powder, and vanilla extract. Whisk well until the matcha is fully dissolved and no clumps remain.
- Add the chia seeds to the liquid mixture. Stir thoroughly for about one minute to prevent the seeds from clumping at the bottom.
- Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the mixture thickens to a pudding consistency.
- Stir the pudding again before serving. If it is too thick, add a splash more milk until you reach your desired creaminess.
- Serve cold with your favorite toppings.
Notes
- For extra protein, stir in 1 scoop of vanilla or unflavored protein powder with the wet ingredients before adding the chia seeds.
- To make this a parfait, layer the matcha pudding with Greek yogurt (if not vegan) or coconut cream and fresh berries.
- If you prefer a sweeter pudding, increase the maple syrup to 1.5 tablespoons.
