- 1/4 cup chia seeds
- 1 cup milk (dairy or non-dairy)
- 1 teaspoon matcha powder
- 1/2 cup fresh or frozen mango chunks
- 1 tablespoon maple syrup or sweetener (optional)
- Pinch of salt
Instructions
- In a jar or bowl, whisk together the milk, matcha powder, and sweetener until the matcha is fully dissolved and no clumps remain.
- Stir in the chia seeds and the pinch of salt.
- Mix well to prevent the chia seeds from clumping at the bottom.
- Cover the mixture and refrigerate for at least 4 hours, or preferably overnight, until it thickens to a pudding consistency.
- In the morning, stir the pudding. If it is too thick, add a splash more milk until you reach your desired texture.
- Top with fresh mango chunks before serving.
Notes
- For a thicker pudding, use slightly less milk.
- If you use frozen mango, you can blend it with a small amount of milk to create a puree to layer into the pudding.
- Feel free to add a few drops of vanilla extract for extra flavor.
