Description

This recipe shows you how to make crispy, golden-brown fish fillets using a matzo meal coating, perfect for a flavorful weeknight meal or a traditional observance.

Ingredients

Scale
  • 1.5 lbs white fish fillets (such as cod or tilapia)
  • 1 cup matzo meal
  • 1/2 cup all-purpose flour (or substitute with extra matzo meal for Passover)
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Vegetable oil, for frying

Instructions

  1. Pat the fish fillets completely dry using paper towels. This step helps the coating stick.
  2. Set up a standard breading station with three shallow dishes.
  3. In the first dish, combine the flour (if using) and half of the matzo meal.
  4. In the second dish, lightly beat the eggs.
  5. In the third dish, mix the remaining matzo meal with salt, pepper, garlic powder, and paprika.
  6. Dredge each fish fillet first in the flour/matzo meal mixture, shaking off excess.
  7. Dip the floured fillet into the beaten egg, allowing excess to drip off.
  8. Coat the fillet thoroughly in the seasoned matzo meal mixture, pressing gently so the coating adheres well.
  9. Pour about 1/2 inch of vegetable oil into a large, heavy-bottomed skillet and heat over medium-high heat until the oil reaches 350 degrees F.
  10. Carefully place the coated fillets into the hot oil, ensuring you do not overcrowd the pan. Work in batches if necessary.
  11. Fry for 3 to 4 minutes per side, until the crust is golden brown and the fish is cooked through and flakes easily with a fork.
  12. Remove the fish from the oil and place it on a wire rack set over a baking sheet to drain excess oil.
  13. Serve immediately.

Notes

  • For extra crispiness, chill the breaded fish fillets in the refrigerator for 15 minutes before frying.
  • Use a neutral oil with a high smoke point, like canola or vegetable oil, for frying.
  • If you prefer a lighter crust, you can bake the fish at 400 degrees F for 12 to 15 minutes instead of frying.
