Ingredients

- 1 cup dry couscous
- 1 cup boiling water or vegetable broth
- 1 tablespoon olive oil
- 1/2 cup chopped cucumber
- 1/2 cup halved cherry tomatoes
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Place the dry couscous in a bowl. Pour the boiling water or broth over the couscous. Cover the bowl and let it stand for 5 minutes.
- Fluff the prepared couscous with a fork. Stir in the olive oil.
- Add the chopped cucumber, cherry tomatoes, feta cheese, and fresh parsley to the couscous.
- In a small bowl, whisk together the lemon juice and dried oregano.
- Pour the dressing over the couscous mixture. Toss gently to combine all ingredients.
- Season with salt and pepper to your liking. Serve immediately for a quick lunch.
Notes
- For extra protein, add a can of drained chickpeas.
- You can prepare the couscous and chop the vegetables ahead of time. Store separately and combine just before serving.
- If you do not have fresh parsley, use 1 teaspoon of dried dill for a different flavor.
