Description

Ingredients

  • 1 cup dry couscous
  • 1 cup boiling water or vegetable broth
  • 1 tablespoon olive oil
  • 1/2 cup chopped cucumber
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Place the dry couscous in a bowl. Pour the boiling water or broth over the couscous. Cover the bowl and let it stand for 5 minutes.
  2. Fluff the prepared couscous with a fork. Stir in the olive oil.
  3. Add the chopped cucumber, cherry tomatoes, feta cheese, and fresh parsley to the couscous.
  4. In a small bowl, whisk together the lemon juice and dried oregano.
  5. Pour the dressing over the couscous mixture. Toss gently to combine all ingredients.
  6. Season with salt and pepper to your liking. Serve immediately for a quick lunch.

Notes

  • For extra protein, add a can of drained chickpeas.
  • You can prepare the couscous and chop the vegetables ahead of time. Store separately and combine just before serving.
  • If you do not have fresh parsley, use 1 teaspoon of dried dill for a different flavor.
