Description

This Mediterranean squash casserole features a harmonious blend of tender squash, tangy feta, sun-kissed tomatoes, and aromatic herbs, all brought together with rich olive oil. It’s a comforting and easy-to-make dish that brings the flavors of the Mediterranean to your table.


Ingredients

  • 2 lbs yellow squash, thinly sliced
  • 1 tablespoon olive oil, plus more for greasing
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional, for topping)


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with olive oil.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced tomatoes (with their liquid), fresh parsley, fresh basil, and dried oregano. Bring the mixture to a simmer, then reduce heat and cook for 5 minutes to allow the flavors to meld.
  4. In the prepared baking dish, arrange half of the sliced yellow squash in an even layer.
  5. Spoon half of the tomato mixture over the squash. Sprinkle with half of the crumbled feta cheese.
  6. Arrange the remaining sliced squash over the feta. Top with the remaining tomato mixture and the rest of the feta cheese. Season with salt and black pepper to taste.
  7. If desired, sprinkle the grated Parmesan cheese over the top for an extra golden crust.
  8. Bake for 30-35 minutes, or until the squash is tender and the casserole is bubbly and lightly browned on top.
  9. Remove from the oven and let stand for a few minutes before serving.

  • For a richer flavor, you can roast the squash slightly before adding it to the casserole.
