- 2 lbs yellow squash, thinly sliced
- 1 tablespoon olive oil, plus more for greasing
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with olive oil.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced tomatoes (with their liquid), fresh parsley, fresh basil, and dried oregano. Bring the mixture to a simmer, then reduce heat and cook for 5 minutes to allow the flavors to meld.
- In the prepared baking dish, arrange half of the sliced yellow squash in an even layer.
- Spoon half of the tomato mixture over the squash. Sprinkle with half of the crumbled feta cheese.
- Arrange the remaining sliced squash over the feta. Top with the remaining tomato mixture and the rest of the feta cheese. Season with salt and black pepper to taste.
- If desired, sprinkle the grated Parmesan cheese over the top for an extra golden crust.
- Bake for 30-35 minutes, or until the squash is tender and the casserole is bubbly and lightly browned on top.
- Remove from the oven and let stand for a few minutes before serving.
Notes
- For a richer flavor, you can roast the squash slightly before adding it to the casserole.
- Feel free to add other Mediterranean vegetables like bell peppers or zucchini.
- Adjust the amount of herbs to your preference. Fresh herbs are recommended for the best flavor.
