- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 2 whole wheat pita breads
- Lettuce leaves (optional)
- Tomato slices (optional)
Instructions
- In a medium bowl, flake the drained tuna with a fork.
- Add the red onion, celery, feta cheese, and parsley to the bowl.
- In a separate small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to create the dressing.
- Pour the dressing over the tuna mixture. Gently toss everything together until just combined. Do not overmix.
- Warm the pita breads slightly if desired.
- Carefully open each pita bread to form a pocket.
- Spoon the Mediterranean tuna salad evenly into the two pita pockets.
- If using, stuff the pita pockets with lettuce leaves and tomato slices. Serve immediately.
