Description

Learn how to make light, airy, and crisp meringue cookies using the simple French meringue method. These melt-in-your-mouth treats are perfect for beginners and ideal for holiday baking or edible gifts.

Ingredients

Scale
  • 4 large egg whites, room temperature
  • 1 cup superfine (caster) sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon cream of tartar
  • Pinch of salt

Instructions

  1. Preheat your oven to the lowest setting, usually between 170F to 200F (75C to 95C). Line two large baking sheets with parchment paper.
  2. Make sure your mixing bowl and whisk attachment are completely clean and free of any grease or water. Add the room temperature egg whites and salt to the bowl.
  3. Begin whipping the egg whites on medium speed until they become foamy. Add the cream of tartar and increase the speed to medium-high.
  4. Once soft peaks form (the peaks curl over when you lift the whisk), slowly begin adding the superfine sugar, one tablespoon at a time, allowing about 30 seconds between additions. This slow addition is key for stable meringue.
  5. Continue beating until the meringue is stiff, glossy, and holds firm peaks. When you rub a small amount between your fingers, you should not feel any sugar granules. This usually takes 8 to 10 minutes total whipping time.
  6. Gently fold in the vanilla extract using a spatula until just combined. Do not overmix.
  7. Transfer the meringue to a piping bag fitted with your desired tip (a star tip creates classic meringue kisses).
  8. Pipe small mounds or kisses onto the prepared baking sheets, leaving about one inch between each cookie.
  9. Place the baking sheets in the preheated, low-temperature oven. Bake (dry) for 1 to 1.5 hours, depending on the size of your cookies. They should feel firm and lift easily off the parchment paper.
  10. Turn off the oven, prop the door open slightly with a wooden spoon, and let the meringue cookies cool completely inside the oven for at least 1 hour, or preferably overnight. This drying process helps them achieve that perfect crisp exterior and melt-in-your-mouth interior.

Notes

  • For flavored meringue cookies, add 1 teaspoon of Jello powder along with the sugar, or substitute 1/2 teaspoon of peppermint extract with the vanilla for a festive twist.
  • Ensure your sugar is superfine (caster sugar) for the best dissolving results in the egg whites.
  • If your kitchen is humid, baking time may need to be extended, and you must keep the oven door propped open for proper drying.
  • These are naturally gluten-free meringues, making them a safe choice for many guests.
