Description

Make a quick homemade version of the popular fast-food Mexican pizza using crispy tortillas, seasoned beef, beans, and enchilada sauce.


Ingredients

Scale
  • 10 small flour tortillas
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 (16 ounce) can refried beans, warmed
  • 1 cup enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup diced tomatoes (optional)


Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the flour tortillas one or two at a time and cook for 1 to 2 minutes per side until crisp. Remove and set aside on a paper towel-lined plate.
  2. Brown the ground beef in the same skillet, breaking it up as it cooks. Drain off any excess grease.
  3. Stir in the taco seasoning and water according to the seasoning packet directions. Simmer for 5 minutes until the sauce thickens slightly.
  4. Preheat your oven to 375 degrees Fahrenheit.
  5. To assemble the first pizza layer, place one crispy tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla.
  6. Spoon half of the seasoned ground beef mixture over the beans.
  7. Top the beef layer with half of the enchilada sauce and half of the shredded cheese.
  8. Place the second crispy tortilla on top of the cheese layer. Repeat the layering process: remaining beans, remaining beef, remaining enchilada sauce, and remaining cheese.
  9. Bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven. Top with sliced black olives and diced tomatoes, if using. Slice into wedges and serve immediately.

Notes

  • You can use pre-made crispy tortilla shells if you prefer to skip frying the tortillas.
  • For a faster version, use pre-cooked ground turkey or pre-cooked seasoned ground beef.
  • If you like more sauce, increase the amount of enchilada sauce used in the layers.
