Description
This Mexican street corn dip is a party-friendly dish inspired by elote, perfect for serving with chips at gatherings. It is a cheesy, spicy dip that brings the vibrant flavors of street corn to your table.

- 4 cups corn kernels (fresh, frozen, or canned, drained)
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup crumbled cotija cheese, plus more for garnish
- 1/4 cup chopped fresh cilantro, plus more for garnish
- 1 jalapeño, finely diced (remove seeds for less heat)
- 1 clove garlic, minced
- 1/2 teaspoon chili powder, plus more for garnish
- 1/4 teaspoon smoked paprika
- Juice of 1 lime
- Salt to taste
- Black pepper to taste
- Tortilla chips, for serving
Instructions
- If using fresh corn, blanch or grill the kernels until tender and slightly charred. If using frozen, cook according to package directions. If using canned, drain well.
- In a large bowl, combine the corn kernels, mayonnaise, sour cream (or Mexican crema), crumbled cotija cheese, chopped cilantro, diced jalapeño, minced garlic, chili powder, and smoked paprika.
- Squeeze in the juice of one lime.
- Stir all ingredients together until well combined.
- Taste and season with salt and black pepper as needed.
- Transfer the dip to a serving bowl.
- Garnish with additional crumbled cotija cheese, fresh cilantro, and a sprinkle of chili powder.
- Serve immediately with tortilla chips. This dip can also be served warm; simply heat gently on the stovetop or in the microwave before serving.
Notes
- For extra smoky flavor, char the corn kernels on a grill or in a hot skillet before mixing.
- Adjust the amount of jalapeño to your preferred spice level.
- If cotija cheese is unavailable, you can substitute with feta cheese.
- This dip can be made ahead of time and stored in the refrigerator for up to 2 days. Stir well before serving.
