Ingredients

  • 4 cups corn kernels (fresh, frozen, or canned, drained)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/2 cup crumbled cotija cheese, plus more for garnish
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 1 jalapeño, finely diced (remove seeds for less heat)
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder, plus more for garnish
  • 1/4 teaspoon smoked paprika
  • Juice of 1 lime
  • Salt to taste
  • Black pepper to taste
  • Tortilla chips, for serving


Instructions

  1. If using fresh corn, blanch or grill the kernels until tender and slightly charred. If using frozen, cook according to package directions. If using canned, drain well.
  2. In a large bowl, combine the corn kernels, mayonnaise, sour cream (or Mexican crema), crumbled cotija cheese, chopped cilantro, diced jalapeño, minced garlic, chili powder, and smoked paprika.
  3. Squeeze in the juice of one lime.
  4. Stir all ingredients together until well combined.
  5. Taste and season with salt and black pepper as needed.
  6. Transfer the dip to a serving bowl.
