Ingredients

  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder, plus more for garnish
  • 1/4 teaspoon smoked paprika
  • 1 small garlic clove, minced
  • Salt to taste
  • Tortilla chips or fresh vegetables for serving


Instructions

  1. If using fresh corn, cook it until tender. If using frozen, thaw and drain well.
  2. In a large bowl, combine the corn, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, smoked paprika, and minced garlic.
  3. Stir until all ingredients are well combined.
  4. Taste and add salt as needed.
