  • Chili powder or Tajín seasoning, for dusting
  • Optional: 1 tablespoon melted butter


Instructions

  1. Prepare the corn: Grill, boil, or roast the corn until tender and slightly charred. If grilling, place corn directly over medium heat, turning occasionally until kernels are lightly browned, about 10 to 12 minutes.
  2. While the corn cooks, prepare the coating: In a small bowl, mix the mayonnaise and Mexican crema or sour cream until smooth.
  3. Once the corn is cooked, you can brush it lightly with melted butter, if using.
  4. Spread a thin, even layer of the creamy mixture over the entire surface of each hot ear of corn.
  5. Immediately roll the coated corn in the crumbled Cotija cheese, pressing gently so the cheese adheres.
  6. Sprinkle generously with chili powder or Tajín seasoning.
