- 4 ears of corn
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup crumbled cotija cheese
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt to taste
- Optional: additional chili powder and cilantro for garnish
Instructions
- Grill or boil the corn until tender.
- In a small bowl, mix mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, and garlic powder.
- Spread the mixture evenly over the corn.
- Sprinkle with additional chili powder and cilantro if desired.
- Serve immediately.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the mayonnaise mixture.
- If cotija cheese is unavailable, feta cheese can be a substitute.
