Description

Bake these Mini Apple Pie Bites for a quick, heartwarming dessert or a festive holiday treat. They are simple to make and taste just like grandma’s classic apple pie.

Ingredients

Scale
  • 1 box refrigerated pie crusts (2 count)
  • 3 large apples (like Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1/4 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a standard 12-cup muffin tin.
  2. In a medium bowl, combine the diced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the apples evenly.
  3. Unroll the pie crusts onto a lightly floured surface. Use a 3-inch round cookie cutter to cut out circles from the dough. You should get about 6-8 circles per crust. Reroll scraps if needed.
  4. Gently press each dough circle into the cups of the prepared muffin tin, forming a small cup shape.
  5. Spoon the apple filling evenly into each dough cup, being careful not to overfill.
  6. Fold the edges of the dough up slightly around the filling if needed to help hold the shape.
  7. Brush the edges of the dough lightly with the beaten egg wash.
  8. Bake for 15-18 minutes, or until the crust is golden brown and the filling is bubbling.
  9. Let the bites cool in the muffin tin for 5 minutes before carefully removing them to a wire rack to cool completely.

Notes

  • For an extra touch, sprinkle a tiny amount of coarse sugar on top of the egg-washed edges before baking.
  • If you prefer a richer flavor, use butter instead of flour in the apple mixture.
  • These are best eaten the day they are made, but you can store leftovers in an airtight container at room temperature for up to two days.
