Description

This Mississippi Pot Roast recipe is incredibly easy and delivers a tender, flavorful roast with minimal effort. Perfect for a busy day, this slow cooker meal combines simple ingredients to create a delicious and satisfying dinner that tastes like you spent hours in the kitchen.

Ingredients

Scale
  • 3-4 pound chuck roast
  • 1 packet (1 ounce) Ranch seasoning mix
  • 1 packet (1 ounce) au jus gravy mix
  • 1/2 cup (1 stick) unsalted butter
  • 5-6 pepperoncini peppers (whole)
  • 1/4 cup pepperoncini juice (from the jar)

Instructions

  1. Place the chuck roast in the bottom of your slow cooker.
  2. Sprinkle the Ranch seasoning mix evenly over the top of the roast.
  3. Sprinkle the au jus gravy mix evenly over the roast.
  4. Place the stick of butter on top of the roast.
  5. Arrange the pepperoncini peppers around the roast.
  6. Pour the pepperoncini juice over everything.
  7. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the roast is fall-apart tender.
  8. Once cooked, shred the pot roast with two forks directly in the slow cooker, mixing it with the delicious juices.
  9. Serve warm and enjoy!

Notes

  • For best results, do not add any extra liquid to the slow cooker; the roast will release its own juices.
  • The pepperoncini peppers add a subtle tang and a touch of heat without making the dish spicy.
  • This roast is fantastic served over mashed potatoes, egg noodles, or rice.
  • Leftovers store well in an airtight container in the refrigerator for up to 3-4 days.
