Description

This Mississippi Pot Roast recipe is incredibly easy and delivers a tender, flavorful roast perfect for a comforting meal. It uses simple ingredients and cooks slow to create a dish that tastes like you spent hours in the kitchen.


Ingredients

  • 3-4 pounds chuck roast
  • 1 packet (1 oz) au jus gravy mix
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup (1 stick) unsalted butter
  • 5-6 pepperoncini peppers (whole or sliced)
  • 1/4 cup pepperoncini juice (from the jar)


Instructions

  1. Place the chuck roast in the slow cooker.
  2. Sprinkle the au jus gravy mix and ranch seasoning mix evenly over the roast.
  3. Place the stick of butter on top of the roast.
  4. Add the pepperoncini peppers around the roast.
  5. Pour the pepperoncini juice over everything.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the roast is fork-tender.
  7. Once cooked, shred the roast with two forks directly in the slow cooker juices.
  8. Serve warm with your favorite sides.

Notes

  • For extra flavor, you can sear the chuck roast in a hot pan with a little oil before adding it to the slow cooker.
  • Adjust the amount of pepperoncini peppers to your taste; they add a mild tang and very little heat.
  • This roast is delicious served over mashed potatoes, egg noodles, or with crusty bread for dipping.
