Instructions

  1. Preheat your oven to 425°F (220°C). Butter and lightly dust four 6-ounce ramekins with cocoa powder. Place them on a baking sheet.
  2. In a heatproof bowl set over a saucepan of simmering water, melt the chopped bittersweet chocolate and butter together. Stir until smooth and fully combined. Remove from heat and let it cool slightly.
  3. In a separate medium bowl, whisk together the whole eggs, egg yolks, granulated sugar, and salt until well combined and slightly lighter in color.
  4. Gently whisk the slightly cooled chocolate mixture into the egg mixture until just combined.
  5. Stir in the flour and vanilla extract until just incorporated. Be careful not to overmix.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 11-13 minutes, or until the edges are set but the center is still soft and gooey.
  8. Let the cakes rest in the ramekins for 1 minute. Then, carefully invert each ramekin onto a serving plate.
