Instructions
- Preheat your oven to 425°F (220°C). Butter and lightly dust four 6-ounce ramekins with cocoa powder. Place them on a baking sheet.
- In a heatproof bowl set over a saucepan of simmering water, melt the chopped bittersweet chocolate and butter together. Stir until smooth and fully combined. Remove from heat and let it cool slightly.
- In a separate medium bowl, whisk together the whole eggs, egg yolks, granulated sugar, and salt until well combined and slightly lighter in color.
- Gently whisk the slightly cooled chocolate mixture into the egg mixture until just combined.
- Stir in the flour and vanilla extract until just incorporated. Be careful not to overmix.
- Divide the batter evenly among the prepared ramekins.
- Bake for 11-13 minutes, or until the edges are set but the center is still soft and gooey.
- Let the cakes rest in the ramekins for 1 minute. Then, carefully invert each ramekin onto a serving plate.
- Serve immediately, perhaps with a dusting of powdered sugar or a scoop of ice cream.

- For an extra touch of decadence, you can place a small piece of chocolate in the center of each ramekin before baking.
