Soft and chewy oatmeal cookies packed with M&Ms and a hint of peanut butter.

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup creamy peanut butter
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 2 cups rolled oats
- 1 1/2 cups M&M’s chocolate candies
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and peanut butter.
- In a separate small bowl, whisk together the baking soda, baking powder, and salt. Add this to the wet ingredients and mix until combined.
- Gradually add the all-purpose flour, mixing until just incorporated. Do not overmix.
- Stir in the rolled oats and M&M’s.
- Drop spoonfuls of dough onto the prepared baking sheets, leaving space between cookies.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are still soft.
- Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- Make sure your butter is truly softened for best results.
- Do not overbake the cookies; they will continue to set as they cool.
- Store cooled cookies in an airtight container at room temperature for up to 3-4 days.
