Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups sliced carrots (about 1 pound)
  • 4 cups vegetable broth
  • Salt and black pepper to taste
  • Fresh cilantro or parsley, for garnish (optional)


Instructions

  1. Heat olive oil in a pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and ginger, cook for 1 minute until fragrant.
  3. Stir in cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  4. Add sliced carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 8-10 minutes, or until carrots are tender.
  5. Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro or parsley if desired.

  • For a creamier soup, you can add a splash of coconut milk or a tablespoon of yogurt before blending.
