- 2 pounds small potatoes, such as Yukon Gold or red potatoes
- 1/4 cup red wine vinegar
- 2 tablespoons Dijon mustard
- 1/4 cup olive oil
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Wash and halve or quarter the potatoes, depending on their size.
- Place potatoes in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- While potatoes are still warm, whisk together the red wine vinegar, Dijon mustard, and olive oil in a large bowl.
- Add the warm potatoes to the dressing and gently toss to coat.
- Stir in the chopped fresh parsley.
- Season with salt and black pepper to taste.
- Serve warm or at room temperature.
Notes
- Using warm potatoes helps them absorb the dressing better.
- You can add other herbs like chives or tarragon.
- For added flavor, include finely chopped shallots or capers.
