Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound mixed mushrooms, finely chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1/2 teaspoon fresh rosemary, chopped
  • Salt and freshly ground black pepper to taste
  • 1/4 cup breadcrumbs
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat. Add chopped mushrooms and onion. Cook until softened and browned, about 10-15 minutes.
  3. Add minced garlic, thyme, and rosemary to the skillet. Cook for another minute until fragrant.
  4. Season with salt and pepper. Stir in breadcrumbs and cook for 2-3 minutes until the mixture is dry. Remove from heat and let cool slightly.
  5. Unfold the thawed puff pastry sheet on a lightly floured surface.
  6. Spoon the mushroom mixture onto the center of the puff pastry, shaping it into a log.
  7. Fold the puff pastry over the mushroom filling, trimming any excess dough. Crimp the edges to seal.
  8. Place the Wellington on a baking sheet lined with parchment paper.
  9. Brush the top of the Wellington with the beaten egg wash.
  10. Bake for 25-30 minutes, or until the pastry is golden brown and puffed.
  11. Let it rest for a few minutes before slicing and serving.
