Ingredients

  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup evaporated milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional, for heat)


Instructions

  1. Melt the butter in a small saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly whisk in the whole milk until the mixture is smooth and begins to thicken slightly.
  4. Reduce the heat to low. Add the shredded cheddar cheese, stirring until it is completely melted and the sauce is smooth.
  5. Stir in the evaporated milk, salt, garlic powder, onion powder, paprika, chili powder, and cumin. Mix well until fully combined and heated through.
  6. Taste the sauce. Add cayenne pepper if you want more heat.
  7. Remove from heat. Serve immediately over nachos, fries, or use as a quick cheese dip.
