Ingredients

  • 1 box white cake mix (plus ingredients called for on box)
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • Neon food coloring gel (various colors)
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Neon sprinkles (generous amount)
  • Extra neon sprinkles for garnish


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, mix the cake mix, oil, buttermilk, eggs, and vanilla extract until just combined. Do not overmix.
  3. Divide the batter evenly into three separate bowls. Add a different neon food coloring gel to each bowl, stirring gently until the color is uniform.
  4. Pour the colored batters randomly into the prepared pans, layering the colors to create a marbled effect.
  5. Bake for 28 to 32 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  6. While the cakes cool, make the whipped cream frosting. In a clean bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Once the cakes are completely cool, place the first layer on your serving plate. Spread a layer of whipped cream frosting over the top.
  8. Gently press a handful of neon sprinkles into the frosting layer.
  9. Top with the second cake layer, spread more frosting, and press on more sprinkles. Repeat with the third layer.
  10. Frost the top and sides of the entire cake with the remaining whipped cream. Do not worry about making it perfect; embrace the ‘mess’ look.
  11. Generously cover the entire cake with the remaining neon sprinkles.
  12. Chill the cake for at least 30 minutes before slicing and serving.

Notes

  • For extra bright colors, you can also gently fold a small handful of neon sprinkles into the whipped cream before frosting.
  • If you want a taller cake, you can use three 6-inch pans instead of two 8-inch pans. Adjust baking time as needed.
