- 2 pounds baby new potatoes, scrubbed
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Greek yogurt
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh dill
- Salt and freshly ground black pepper to taste
Instructions
- Place the new potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.
- Bring the water to a boil over medium-high heat, then reduce the heat to medium and simmer until the potatoes are tender when pierced with a fork, about 15-20 minutes depending on their size.
- Drain the potatoes well and let them cool slightly. You can cut larger potatoes in half or quarters if desired, but keep smaller ones whole.
- While the potatoes are cooling, whisk together the mayonnaise, sour cream (or Greek yogurt), Dijon mustard, and apple cider vinegar in a large bowl.
- Add the chopped red onion and fresh dill to the dressing and mix well.
- Add the slightly cooled potatoes to the bowl with the dressing. Gently toss to coat all the potatoes.
- Season with salt and freshly ground black pepper to taste.
- For best flavor, cover the potato salad and refrigerate for at least 30 minutes before serving, allowing the flavors to meld.
