Make this comforting and wholesome chicken and rice soup using quality broth and plenty of vegetables for a truly nourishing meal.

- 6 cups high-quality chicken broth or bone broth
- 1 pound boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 large yellow onion, chopped
- 2 large carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 cup long-grain white rice or brown rice
- 1 cup water (if using brown rice)
- 1/2 cup frozen peas
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Place the chicken, broth, onion, carrots, celery, thyme, and rosemary into a large pot or Dutch oven.
- Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to low, cover, and simmer for 20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and set it aside to cool slightly. Keep the broth simmering.
- Add the rice to the simmering broth. If using white rice, add no extra water. If using brown rice, add 1 cup of water. Simmer according to the rice package directions (about 20-30 minutes for white rice, 40-45 minutes for brown rice), until the rice is tender.
- While the rice cooks, shred the cooled chicken using two forks.
- Once the rice is cooked, return the shredded chicken to the pot. Stir in the frozen peas.
- Simmer for 5 more minutes until the peas are heated through.
- Taste the soup and add salt and pepper as needed.
- Ladle the soup into bowls and garnish with fresh parsley before serving.
Notes
- For extra nourishment, use homemade bone broth rich in collagen.
- If you prefer a thicker soup, remove about 1 cup of the cooked rice and broth mixture, blend it until smooth, and stir it back into the pot.
- For a flavor boost, add 1 bay leaf during the initial simmer and remove it before serving.
