Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb baby potatoes, halved or quartered if large
  • 1 lb broccoli florets
  • 1 red onion, cut into wedges
  • 1 lemon, half juiced, half sliced
  • 3 tablespoons olive oil
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, half of the Italian seasoning, garlic powder, salt, and pepper.
  3. In the same bowl (no need to wash!), add the potatoes, broccoli, and red onion. Drizzle with the remaining 2 tablespoons of olive oil, the rest of the Italian seasoning, salt, and pepper. Add the lemon juice and toss everything to coat evenly.
  4. Spread the vegetables in a single layer on a large baking sheet or in a roasting pan.
  5. Nestle the seasoned chicken pieces among the vegetables.
  6. Arrange the lemon slices over the chicken and vegetables.
  7. Roast for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
  8. Serve hot, directly from the pan.

Notes

  • For crispier potatoes, you can parboil them for about 5-7 minutes before tossing them with the other vegetables.
  • Feel free to substitute other vegetables like bell peppers, carrots, or zucchini.
  • If you prefer a stronger herb flavor, you can add fresh herbs like rosemary or thyme during the last 10 minutes of roasting.
