Description
Prepare a complete, flavorful meal with chicken, zucchini, and Mediterranean seasonings all cooked on a single baking sheet for simple cleanup.
Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 3 medium zucchini, chopped
- 1 pint cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese (for topping)
Instructions
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easier cleanup.
- In a large bowl, combine the chopped chicken, zucchini, cherry tomatoes, and olives.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, thyme, minced garlic, salt, and pepper.
- Pour the oil mixture over the chicken and vegetables. Toss everything well until evenly coated.
- Spread the chicken and vegetable mixture in a single layer onto the prepared baking sheet.
- Bake for 20 minutes.
- Remove the pan from the oven, sprinkle the feta cheese evenly over the top, and return to the oven.
- Bake for another 5 to 10 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the zucchini is tender.
- Serve directly from the pan or transfer to plates.
Notes
- Cut the chicken pieces uniformly so they cook at the same rate as the vegetables.
- If your chicken pieces are thicker than 1 inch, you may need to add 5 minutes to the initial baking time.
- Use fresh oregano instead of dried for a stronger flavor; use 2 tablespoons fresh.
