Description

This one-pan meal is a lifesaver for busy weeknights. You’ll roast sausage, potatoes, and your favorite veggies together for a delicious and easy dinner. It’s ready in just 25 minutes!

Ingredients

Scale
  • 1 pound smoked sausage, cut into 1-inch pieces
  • 1.5 pounds baby potatoes, halved or quartered
  • 1 pound broccoli florets
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a large baking sheet.
  3. Roast the potatoes for 10 minutes.
  4. While the potatoes are roasting, add the sausage, broccoli, bell peppers, and red onion to the same bowl. Add the remaining 1 tablespoon of olive oil, garlic powder, onion powder, rosemary, salt, and pepper. Toss to coat everything evenly.
  5. After 10 minutes, remove the baking sheet from the oven. Add the sausage and vegetable mixture to the baking sheet with the potatoes, spreading everything into an even layer.
  6. Return the baking sheet to the oven and roast for another 15 minutes, or until the vegetables are tender and the sausage is browned.
  7. Serve hot and enjoy your easy one-pan meal!

Notes

  • Feel free to swap out the vegetables for your favorites, such as Brussels sprouts, carrots, or zucchini.
  • For extra flavor, you can add a pinch of paprika or red pepper flakes.
