- 1 pound ground beef
- 1 packet (1 ounce) taco seasoning
- 1 cup water
- 1 cup uncooked elbow macaroni
- 1 can (10 ounces) diced tomatoes with green chilies, undrained
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, salsa, chopped cilantro, diced avocado
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
- Stir in the taco seasoning and water. Bring to a boil.
- Add the uncooked macaroni and the diced tomatoes with green chilies. Stir well.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the pasta is tender, stirring occasionally.
- Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
- Serve hot with your favorite taco toppings.
Notes
- For a spicier dish, use a hot taco seasoning or add a pinch of cayenne pepper.
- You can substitute ground turkey or chicken for the ground beef.
- If the pasta seems too dry, add a little more water, about 1/4 cup at a time, until it reaches your desired consistency.
