Description
This is a quick and easy one-pot chicken recipe. It’s creamy, flavorful with tomato and basil, and ready in just 20 minutes. Perfect for busy weeknights when you want a delicious meal without the fuss.

- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves, chopped
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add chicken pieces and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 3-4 minutes.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Pour in the diced tomatoes (with their juice) and bring to a simmer.
- Stir in heavy cream and Parmesan cheese. Cook until the sauce thickens slightly, about 2-3 minutes.
- Return the cooked chicken to the skillet. Stir in chopped fresh basil.
- Season with additional salt and pepper if needed.
- Serve immediately.
Notes
- You can substitute chicken thighs for breasts if preferred.
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
- Fresh basil adds the best flavor, but you can use dried basil (about 1 tsp) if needed.
