Description

Whip up a delicious and comforting One-Pot Creamy Tuscan Chicken with spinach and sun-dried tomatoes. This easy Italian-inspired dish is perfect for a weeknight meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: Red pepper flakes for a little heat


Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  3. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 3-5 minutes.
  5. Add minced garlic and cook for 1 minute more until fragrant.
  6. Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
  7. Stir in heavy cream and chopped sun-dried tomatoes. Bring to a simmer.
  8. Return the chicken to the skillet. Reduce heat to medium-low, cover, and simmer for 10-15 minutes, or until chicken is cooked through.
  9. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  10. Remove from heat and stir in Parmesan cheese.
  11. Season with additional salt and pepper if needed. Serve hot.

Notes

  • For a thicker sauce, simmer uncovered for an extra few minutes.
  • If you don’t have sun-dried tomatoes, you can use tomato paste for a similar flavor.
  • Add other vegetables like mushrooms or bell peppers for extra flavor and nutrients.
  • Serve with pasta, rice, or crusty bread.
