Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 8 ounces dry penne or farfalle pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Fresh basil, chopped, for garnish (optional)


Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. Add onion to the pot and cook until softened, about 3 minutes.
  4. Stir in garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  5. Pour in diced tomatoes (with juice) and chicken broth. Bring the mixture to a boil.
  6. Add the dry pasta to the boiling liquid. Reduce heat to medium-low, cover, and simmer for about 10-12 minutes, stirring occasionally until the pasta is cooked al dente.
  7. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  8. Return the cooked chicken to the pot. Stir in the fresh spinach until it wilts.
  9. Serve immediately, garnished with fresh basil if desired.

Notes

  • You can substitute chicken thighs for breasts if you prefer.
