A delicious and easy paleo squash casserole recipe that replaces traditional grains and dairy with wholesome, paleo-friendly ingredients. Perfect for a comforting and healthy meal.

- 2 lbs yellow squash, thinly sliced
- 1 lb ground turkey or chicken
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (13.5 oz) can full-fat coconut milk
- 2 large eggs, lightly beaten
- 1/4 cup almond flour
- 1/4 cup nutritional yeast (for cheesy flavor)
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Optional: chopped fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
- Add minced garlic and ground turkey (or chicken) to the skillet. Cook, breaking up the meat with a spoon, until browned. Drain any excess fat.
- Stir in the dried oregano, dried basil, salt, and pepper. Cook for another minute until fragrant.
- In a large bowl, whisk together the coconut milk and beaten eggs.
- Stir in the almond flour and nutritional yeast until well combined.
- Add the sliced yellow squash to the bowl with the coconut milk mixture. Gently toss to coat the squash evenly.
- Pour the squash mixture into the prepared baking dish.
- Spoon the cooked turkey mixture over the squash.
- Bake for 30-40 minutes, or until the casserole is set and the top is lightly golden brown.
- Let it rest for a few minutes before serving. Garnish with fresh parsley if desired.
Notes
- For a different protein, you can use ground beef or even omit the meat for a vegetarian version.
- If you don’t have almond flour, you can use coconut flour, but you may need to adjust the amount slightly.
- Ensure your coconut milk is full-fat for the best creamy texture.
