Description

This recipe shows you how to roast carrots coated in Parmesan cheese and garlic until tender inside and slightly crispy outside.


Ingredients

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the cut carrots with olive oil, minced garlic, salt, and pepper until the carrots are evenly coated.
  3. Spread the seasoned carrots in a single layer on the prepared baking sheet.
  4. Roast for 20 minutes.
  5. Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the carrots.
  6. Return the carrots to the oven and roast for another 5 to 10 minutes, or until the carrots are tender and the cheese is melted and lightly browned.
  7. Remove from the oven, sprinkle with fresh parsley, and serve immediately.

Notes

  • For crispier edges, ensure the carrots are in a single layer and do not overcrowd the baking sheet.
  • If you prefer a stronger garlic flavor, add 1 teaspoon of garlic powder along with the salt and pepper.
  • You can substitute butter for olive oil for a richer flavor.
