Description
This recipe shows you how to roast carrots coated in Parmesan cheese and garlic until tender inside and slightly crispy outside.

- 2 lbs carrots, peeled and cut into 1-inch pieces
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, toss the cut carrots with olive oil, minced garlic, salt, and pepper until the carrots are evenly coated.
- Spread the seasoned carrots in a single layer on the prepared baking sheet.
- Roast for 20 minutes.
- Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the carrots.
- Return the carrots to the oven and roast for another 5 to 10 minutes, or until the carrots are tender and the cheese is melted and lightly browned.
- Remove from the oven, sprinkle with fresh parsley, and serve immediately.
Notes
- For crispier edges, ensure the carrots are in a single layer and do not overcrowd the baking sheet.
- If you prefer a stronger garlic flavor, add 1 teaspoon of garlic powder along with the salt and pepper.
- You can substitute butter for olive oil for a richer flavor.
