- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- Pinch of salt
- Pinch of black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the rinsed chickpeas very dry using a clean kitchen towel or paper towels. This step is key for crispiness.
- Place the dried chickpeas on a baking sheet. Drizzle with olive oil and toss to coat evenly.
- Roast the chickpeas for 15 minutes.
- While the chickpeas roast, mix the Parmesan cheese, oregano, garlic powder, salt, and pepper in a small bowl.
- Remove the chickpeas from the oven. Sprinkle the cheese and herb mixture over the hot chickpeas and gently toss to coat.
- Return the chickpeas to the oven and roast for another 10 to 15 minutes, or until golden brown and very crunchy.
- Let them cool slightly before serving. They will crisp up more as they cool.
Notes
- Make sure your chickpeas are completely dry before adding oil; excess moisture prevents crisping.
- For extra crunch, you can skip the cheese on the first roast and add it only for the last 10 minutes.
- Store leftovers in a container that is not airtight to maintain crispness.
