Description
Make smooth, flavorful peach butter with ripe peaches, a touch of sweetness, and warm spices. This recipe is simple to follow and perfect for preserving the taste of summer.

- 8 cups ripe peaches, peeled, pitted, and chopped (about 4 pounds whole peaches)
- 1/2 cup granulated sugar (or to taste, depending on peach sweetness)
- 1/4 cup packed light brown sugar
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
Instructions
- Combine chopped peaches, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cloves in a large, heavy-bottomed pot or Dutch oven.
- Stir well to combine.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Reduce heat to low and simmer, uncovered, for 45-60 minutes, stirring frequently to prevent sticking. The peaches should be very soft and break down easily.
- Carefully transfer the peach mixture to a blender or food processor. Blend until smooth. Alternatively, use an immersion blender directly in the pot.
- Return the smooth peach mixture to the pot. Continue to simmer over low heat for another 1-2 hours, stirring frequently, until the butter thickens to your desired consistency. It should mound on a spoon and not be watery.
- To test for doneness, place a small dollop of peach butter on a chilled plate. If no liquid separates around the edges, it is ready.
- Ladle the hot peach butter into clean, sterilized jars, leaving 1/4 inch headspace.
- Process in a boiling water bath for 10 minutes (adjust time for altitude if necessary) to seal, or store in the refrigerator for up to 3 weeks.
Notes
- Choose very ripe peaches for the best flavor.
- Adjust sugar to your preference and the sweetness of your peaches.
- Stir frequently, especially during the second simmering stage, to prevent scorching.
- For a chunkier butter, you can mash some of the peaches instead of blending all of them.
