Description

Ingredients

  • 8 cups ripe peaches, peeled, pitted, and chopped (about 4 pounds whole peaches)
  • 1/2 cup granulated sugar (or to taste, depending on peach sweetness)
  • 1/4 cup packed light brown sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves


Instructions

  1. Combine chopped peaches, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cloves in a large, heavy-bottomed pot or Dutch oven.
  2. Stir well to combine.
  3. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  4. Reduce heat to low and simmer, uncovered, for 45-60 minutes, stirring frequently to prevent sticking. The peaches should be very soft and break down easily.
  5. Carefully transfer the peach mixture to a blender or food processor. Blend until smooth. Alternatively, use an immersion blender directly in the pot.
  6. Return the smooth peach mixture to the pot. Continue to simmer over low heat for another 1-2 hours, stirring frequently, until the butter thickens to your desired consistency. It should mound on a spoon and not be watery.
  7. To test for doneness, place a small dollop of peach butter on a chilled plate. If no liquid separates around the edges, it is ready.
  8. Ladle the hot peach butter into clean, sterilized jars, leaving 1/4 inch headspace.
  9. Process in a boiling water bath for 10 minutes (adjust time for altitude if necessary) to seal, or store in the refrigerator for up to 3 weeks.

  • Choose very ripe peaches for the best flavor.
  • Adjust sugar to your preference and the sweetness of your peaches.
  • Stir frequently, especially during the second simmering stage, to prevent scorching.
  • For a chunkier butter, you can mash some of the peaches instead of blending all of them.
