Description

Make a traditional, comforting peach cobbler featuring a sweet, tender fruit filling topped with a rich, buttery biscuit crust.


Ingredients

  • 6 cups fresh or frozen peach slices (about 8 medium peaches)
  • 1 cup granulated sugar (adjust to peach sweetness)
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup water
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 1 1/2 cups all-purpose flour (for topping)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup cold milk or buttermilk
  • 1 large egg, beaten (for egg wash)


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Prepare the filling: In a large bowl, combine the peach slices, 1 cup sugar, 1/4 cup flour, lemon juice, cinnamon, and nutmeg. Toss gently to coat.
  3. Pour the peach mixture into the prepared baking dish. Sprinkle the 1/4 cup water evenly over the peaches. Dot the top of the fruit with the small pieces of cold butter.
  4. Prepare the topping: In a separate medium bowl, whisk together the 1 1/2 cups flour, baking powder, salt, and 1/2 cup sugar for the topping.
  5. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Stir in the cold milk or buttermilk until just combined to form a soft dough. Do not overmix.
  7. Drop spoonfuls of the biscuit dough evenly over the top of the peach filling. Leave small gaps between the dough pieces to allow steam to escape.
  8. Brush the tops of the biscuit dough lightly with the beaten egg wash.
  9. Bake for 40 to 50 minutes, or until the topping is golden brown and the filling is bubbly around the edges.
  10. Let the cobbler cool for at least 15 minutes before serving.

Notes

  • If using frozen peaches, do not thaw them before mixing them into the filling.
  • For a richer topping flavor, substitute buttermilk for regular milk.
  • Serve warm with vanilla ice cream or fresh whipped cream.
