Description

Make delicious peach jam. This recipe uses ripe peaches, sugar, and lemon juice to create a vibrant, flavorful jam. It is perfect for canning and enjoying all year.

Ingredients

Scale
  • 8 cups peeled, pitted, and finely chopped peaches (about 4 pounds whole peaches)
  • 6 cups granulated sugar
  • 1/4 cup fresh lemon juice

Instructions

  1. Prepare your canning jars and lids. Sterilize jars by boiling them for 10 minutes. Keep jars hot until ready to fill.
  2. In a large, heavy-bottomed pot, combine the chopped peaches, sugar, and lemon juice.
  3. Stir well to combine. Let the mixture sit for 10-15 minutes to allow the peaches to release their juices.
  4. Bring the mixture to a full rolling boil over medium-high heat, stirring constantly to prevent sticking.
  5. Continue to boil, stirring frequently, until the jam reaches its setting point. This usually takes 20-30 minutes. You can test for doneness by placing a small amount of jam on a chilled plate and drawing your finger through it; if it wrinkles, it’s ready.
  6. Carefully ladle the hot jam into the hot, sterilized jars, leaving 1/4 inch of headspace.
  7. Wipe the rims of the jars clean, center the lids, and screw on the bands until fingertip tight.
  8. Process the jars in a boiling water canner for 10 minutes. Adjust processing time for your altitude if necessary.
  9. Remove jars from the canner and let them cool completely on a wire rack. Check seals after 12-24 hours.
  10. Store sealed jars in a cool, dark place for up to 1 year.

Notes

  • Use ripe, but firm, peaches for the best flavor and texture.
  • Do not reduce the amount of sugar, as it is crucial for the jam’s setting and preservation.
  • Lemon juice adds pectin and brightness to the jam.
  • For a smoother jam, you can mash the peaches slightly before cooking or use an immersion blender at the end.
