Description

Make delicious chunky peach preserves at home. This recipe uses fresh peaches to create a delightful jarred preserve.

Ingredients

Scale
  • 4 cups peeled, pitted, and chopped peaches (about 4 pounds whole peaches)
  • 3 cups granulated sugar
  • 1/4 cup lemon juice
  • 1/2 teaspoon butter (optional, to reduce foam)

Instructions

  1. Combine peaches, sugar, and lemon juice in a large, heavy-bottomed pot or Dutch oven.
  2. Stir well to coat the peaches with sugar. Let the mixture sit for 30 minutes to an hour, allowing the peaches to release their juices.
  3. Place the pot over medium-high heat. Add the butter, if using.
  4. Bring the mixture to a rolling boil, stirring constantly to prevent sticking.
  5. Reduce heat to medium-low and simmer, stirring frequently, for 30-45 minutes, or until the preserves thicken to your desired consistency. The preserves are ready when a spoonful placed on a chilled plate wrinkles when pushed.
  6. Carefully ladle the hot preserves into sterilized jars, leaving 1/4 inch headspace.
  7. Wipe jar rims clean, center lids, and apply bands until fingertip tight.
  8. Process jars in a boiling water canner for 10 minutes (adjust time for altitude if necessary).
  9. Remove jars from canner and let cool completely on a wire rack. Check seals after 24 hours. Properly sealed jars can be stored in a cool, dark place for up to 1 year.

Notes

  • Choose ripe but firm peaches for the best flavor and texture.
  • To easily peel peaches, blanch them in boiling water for 30-60 seconds, then immediately transfer to an ice bath. The skins should slip off easily.
  • Adjust sugar to your taste, but keep in mind sugar is important for preservation.
