- 1/2 cup protein powder (vanilla or unflavored recommended)
- 1/4 cup peanut butter
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 large egg
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- Optional: 1/2 cup chocolate chips or chopped nuts
Instructions
- Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.
- In a large bowl, whisk together the flour, protein powder, sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, whisk together the peanut butter, egg, milk, vegetable oil (or melted butter), and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- If using, gently fold in the chocolate chips or chopped nuts.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a gluten-free option, use a gluten-free all-purpose flour blend.
- You can substitute peanut flour for some of the all-purpose flour for an even stronger peanut flavor.
- Adjust the sweetness by adding more or less sugar, or by using a sugar substitute.
- Feel free to add other mix-ins like berries or seeds.
