- ½ cup protein powder (vanilla or unflavored recommended)
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup milk (dairy or non-dairy)
- ½ cup peanut butter (creamy or crunchy) or ½ cup peanut flour mixed with ¼ cup water
- ¼ cup vegetable oil or melted coconut oil
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup chocolate chips or chopped peanuts (optional mix-in)
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease generously.
- In a large bowl, whisk together the flour, protein powder, sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, whisk together the milk, peanut butter (or rehydrated peanut flour), oil, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix; a few lumps are fine. If using, fold in chocolate chips or chopped peanuts now.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra boost of protein and peanut flavor, you can add an additional 2 tablespoons of peanut butter or peanut flour to the batter.
- Store leftover muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
