These no-bake Pecan Pie Energy Bites are a healthy and delicious holiday treat. They are quick to make and taste just like your favorite pecan pie.

- 1/2 cup pecans, chopped
- 1/4 cup pitted dates, chopped
- 2 tablespoons almond butter
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- Pinch of salt
Instructions
- Combine all ingredients in a food processor.
- Pulse until the mixture is well combined and starts to stick together.
- Roll the mixture into bite-sized balls.
- Place the energy bites on a baking sheet lined with parchment paper.
- Chill in the refrigerator for at least 10 minutes before serving.
Notes
- For a different flavor, you can substitute walnuts for pecans.
- If the mixture is too dry, add a teaspoon of water at a time until it reaches the desired consistency.
- Store the energy bites in an airtight container in the refrigerator for up to one week.
