Description

A classic French side dish featuring sweet peas slowly braised with pearl onions and tender lettuce.

Ingredients

Scale
  • 2 cups fresh or frozen small peas
  • 1 cup pearl onions, peeled
  • 2 cups butter lettuce or little gem lettuce, roughly chopped
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken or vegetable stock
  • 1 teaspoon granulated sugar
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Melt the butter in a heavy-bottomed pot or Dutch oven over medium heat.
  2. Add the peeled pearl onions and cook gently for 5 minutes until they begin to soften.
  3. Add the peas and sugar to the pot. Stir to coat the vegetables in the butter.
  4. Pour in the stock. Bring the mixture to a gentle simmer.
  5. Cover the pot and cook for 10 minutes, stirring occasionally.
  6. Add the chopped lettuce to the pot. Stir it in until it begins to wilt.
  7. Continue to cook, uncovered, for another 5 to 10 minutes, or until the peas are tender and most of the liquid has reduced to a light glaze. Do not overcook the peas.
  8. Season with salt and pepper before serving hot.

Notes

  • Use small, sweet peas for the best flavor. If using frozen peas, do not thaw them before cooking.
  • If you cannot find pearl onions, you can substitute with 1/2 cup of finely chopped shallots, though the texture will change.
  • This dish pairs well with roasted chicken, grilled fish, or simple steak preparations.
