Make elegant pink and white marble chocolate covered strawberries using a simple dipping and swirling technique for a beautiful dessert.

- 1 lb fresh strawberries, washed and completely dried
- 12 oz white chocolate melting wafers or high-quality white chocolate
- 2 oz pink candy melts or white chocolate colored with oil-based pink food coloring
Instructions
- Prepare the strawberries: Wash the strawberries and remove the green tops. Pat them completely dry with paper towels; moisture prevents chocolate from sticking.
- Melt the white chocolate: Place the white chocolate wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until smooth. Do not overheat.
- Color the pink chocolate: Melt the pink candy melts separately, or melt a small portion of the white chocolate and mix in pink oil-based food coloring until you reach the desired shade.
- Prepare for dipping: Line a baking sheet with parchment paper or wax paper.
- Dip the strawberries: Hold a strawberry by the stem end. Dip it into the melted white chocolate, rotating to coat about three-quarters of the berry. Lift and let excess chocolate drip off.
- Create the marble effect: Immediately after dipping in white chocolate, drizzle thin lines of the melted pink chocolate across the white coating.
- Swirl the colors: Take a toothpick or the tip of a small knife. Gently drag the tip through the pink and white chocolate in a swirling or zig-zag motion to create the marble pattern. Work quickly before the chocolate sets.
- Set the chocolate: Place the decorated strawberries onto the prepared parchment-lined baking sheet.
- Cool and set: Allow the chocolate to set at room temperature for about 15 minutes, or place the tray in the refrigerator for 5 to 10 minutes until the chocolate is firm.
Notes
- Ensure strawberries are completely dry before dipping; water causes chocolate to seize.
- Use oil-based food coloring for chocolate; water-based coloring will cause the chocolate to harden prematurely.
- If the chocolate thickens too much while working, microwave it for 10 to 15 seconds to restore fluidity.
