Instructions

  1. In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring until the sugar completely dissolves. Do not boil.
  2. Remove the mixture from the heat. Stir in the finely ground pistachios, rose water, and salt. If you desire a more vibrant green color, add a drop or two of green food coloring now.
  3. Cover the saucepan and let the mixture cool to room temperature.
  4. Once cooled, cover the mixture tightly and chill in the refrigerator for at least 4 hours, or preferably overnight. This step helps the flavors deepen.
  5. Pour the chilled custard base into your ice cream maker and churn according to the manufacturer’s instructions.
  6. Once the ice cream reaches a soft-serve consistency, transfer it to an airtight container.
  7. Freeze for an additional 2 to 4 hours to firm up before serving.
