Ingredients

  • 2 pounds russet potatoes, peeled and cut into 1-inch cubes
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Place the peeled and cubed potatoes in a large pot. Cover with cold water and add a pinch of salt.
  2. Bring the water to a boil over medium-high heat. Reduce heat to medium-low and simmer until the potatoes are tender when pierced with a fork, about 15-20 minutes.
  3. Drain the potatoes thoroughly and let them cool for 10-15 minutes or until they are warm but not hot.
  4. While the potatoes cool, prepare the dressing. In a large bowl, whisk together mayonnaise, yellow mustard, apple cider vinegar, chopped dill, salt, and pepper.
  5. Add the cooled potatoes, chopped celery, and chopped red onion to the bowl with the dressing.
  6. Gently fold all ingredients together until the potatoes are evenly coated with the dressing. Be careful not to mash the potatoes.
  7. Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld. For best results, chill for 4 hours or overnight.
  8. Taste and adjust seasoning if needed before serving.

  • For a smoother dressing, you can use a food processor to finely chop the celery and red onion.
