Instructions

  3. In a separate medium bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Mix with a spatula or spoon until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in 1 ½ cups of chocolate chips.
  6. Divide the batter evenly among the 12 muffin cups. Sprinkle additional chocolate chips on top of each muffin, if desired.
