Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, pumpkin puree, milk, and 1 teaspoon vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
  5. In a small bowl, beat the softened cream cheese, powdered sugar, and 1 teaspoon vanilla extract until smooth and creamy for the filling.
  6. Fill each muffin liner about halfway with the pumpkin batter.
  7. Drop a generous spoonful of the cream cheese filling into the center of each muffin.
  8. Top with a little more pumpkin batter, just enough to cover the cream cheese filling.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the pumpkin batter (not the cream cheese) comes out clean.
  10. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
