Description
Create a restaurant-quality Pumpkin Crème Brûlée at home with this easy recipe. Perfect for a cozy fall dessert, it’s simple to make and impressive to serve.
Ingredients
Scale
- 1 ½ cups heavy cream
- ½ cup whole milk
- ½ cup granulated sugar, divided
- 1 teaspoon pumpkin pie spice
- 4 large egg yolks
- 2 tablespoons pumpkin puree
- ¼ teaspoon salt
- Additional granulated sugar, for topping
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium saucepan, combine the heavy cream, whole milk, ¼ cup of the granulated sugar, and pumpkin pie spice. Heat over medium heat until it just begins to simmer. Remove from heat.
- In a separate bowl, whisk together the egg yolks, pumpkin puree, salt, and the remaining ¼ cup of granulated sugar until smooth.
- Slowly temper the egg yolk mixture by gradually whisking in about half of the warm cream mixture. This prevents the eggs from scrambling.
- Pour the tempered egg mixture back into the saucepan with the remaining cream mixture. Stir well to combine.
- Strain the mixture through a fine-mesh sieve into a clean bowl or pitcher to remove any lumps.
- Divide the custard evenly among four (4-6 ounce) ramekins.
- Place the ramekins in a larger baking dish. Carefully pour hot water into the baking dish, reaching about halfway up the sides of the ramekins. This is your water bath.
- Bake for 35-45 minutes, or until the custards are set but still slightly jiggly in the center.
- Carefully remove the ramekins from the water bath and let them cool completely on a wire rack.
- Once cooled, cover the ramekins with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
- Before serving, sprinkle about 1-2 teaspoons of granulated sugar evenly over the top of each custard.
- Using a kitchen torch, caramelize the sugar until it forms a crisp, golden-brown crust. Let stand for a minute before serving.
Notes
- For a smoother custard, ensure you strain the mixture well.
- The water bath is crucial for even cooking and a silky texture.
- Chill the custards thoroughly before torching for the best results.
